The vines for this wine were re-pruned halfway through the growing season, delaying harvest until late May. This process although significantly reducing crop levels, allows fruit growth to occur in the cooler months resulting in slower ripening, retained acidity, and increased concentration, flavour and balance. Fermentation occurs in small open fermenters and the finished wine basket pressed and then matured in 20% new and 80% 1-2 year old French oak. The wine has been left unfined and only minimal filtration used.
TASTING NOTES: A fantastically intense wine, with a complex bouquet of liqorice, blackberry, pomegranate, cloves and leather. The palate is rich and carries nuances of vanilla bean and roasted coffee from 18 months spent in french oak. Superb acidity and elegant tannins give tremendous structure and length and will allow cellaring of 15 years or more.
SUGGESTED FOODS: This full bodied concentrated wine will pair excellently with rich sharp cheeses or creamy full flavoured Brie’s and Camembert’s, as well as thick cut steaks or sumptuous roast beef.
