Originating from Semillon block #20, the southeast aspect enables a more extended, softer fruit ripening. Harvested, pressed, settled and racked, followed by 14-days warm fermentation, the wine is gently inverted and stored below two degrees for a further month. Enjoy the flavour benefits of a complex wine with lower alcohol content.
Made with as little intervention as possible, this Pét Nat wine is a creation by Konpira Maru and viticulturist Aaron Stephan.
Pét Nat (short for the French 'pétillant naturel' meaning ’natural sparkling') is a wine made according to the méthode ancestrale – the oldest known method of making sparkling wine.
