Fermented in traditional open top fermenters and gently hand plunged to carefully release flavour, tannin and colour without over extraction. Basket pressed directly into French Oak with 40% new and 60% seasoned oak, and matured for 24 months prior to bottling. The wine has been left un-fined to retain greater concentration of flavours.
TASTING NOTES: Inky purple core shading to a garnet rim. The aromas of freshly pulled beetroot and dark berries with hints of Asian spices offer earthy sweet notes. The palate is dense, with strong tannins and brooding fruit flavours that linger for an eternity.
SUGGESTED FOODS: Pairs well with chicken liver, beef stew, game and venison.
