In Queensland's South Burnett, on a crumbling limestone ridge, the best of the north-easterly sun ripens the olives to perfection. The olives are gently cold-pressed within four hours of harvesting and immediately bottled to capture the unique flavours.
Clovely Estate's Frantoio is robust and grassy; lively and herbaceous with a generous peppery finish. Only available in small quantities, it needs to be used young to appreciate, its exquisite flavour. Try it with a fresh-baked batard, a mezze plate or as a finishing and salad oil.
