Clovely Estate

Fermented in traditional open top fermenters and gently hand plunged to carefully release flavour, tannin and colour without over extraction. Basket pressed directly into French Oak with 40% new and 60% seasoned oak, and matured for 24 months prior to bottling. The wine has been left un-fined to retain greater concentration of flavours.

TASTING NOTES: The depth of colour of this classic Georgian gives and immediate suggestion to the power and body of this wine. The nose shows rich aromas of currants, dark cherries, dried thyme, and sweet vanilla from the new french oak. On the palate subtle notes of tanned leather and brioche from careful maturation in barrels add further complexity, while commanding tannins and attractive acidity give body and length.


SUGGESTED FOODS: Pairs well with chicken liver, beef stew, game and venison.
