The Semillon grapes are harvested very early in the season to capture high levels of natural acidity whereas the Chardonnay is allowed to reach a higher maturity to impart riper fruit characters. Both parcels are cold fermented separately without the use of oak to retain a crisp, fresh palate.
TASTING NOTES: Aromas of grassy lemon, tropical fruits and a hint of jasmine tea entice. The palate displays a delicate citrus acidity with nectarine and orange zest giving texture and body. Fresh and uncomplicated this wine is an ideal accompaniment to seafood risotto or chicken salads. Although designed to drink young this style will reward those patient few who enjoy aged white wine.
SUGGESTED FOODS: Pairs well with fresh seafood, chicken salads and risotto dishes.
